Course Description: A three-week intensive food science course on food processing, technology, and safety will be held at the Universidad de Sonora in Hermosillo, Mexico. Emphasis will be on food processing, safety, and exports. Cereal and oilseed processes, nutritional quality of grains and legumes, tortilla production, seafood processing and preservation (sardines, shrimp, squid, octopus, etc.), entomology and toxicology, vegetable and fruit production and processing (grapes, cactus, watermelon, etc.), dairy processing, and meat processing (pork, beef, etc.) are some of the topics to be covered. Instructors from the Universidad de Sonora will provide lectures and lead students in laboratory and field trip experiences in food processing. Course will also include two to four hours of afternoon Intensive Spanish lessons (Monday – Thursday).

May 26 (Friday): travel to Gulf of California/Seafood Processing/Free time
May 27 (Saturday): Free time on Gulf
May 28 (Sunday): Free time on Gulf/Return to Hermosillo
May 29-June 1 (Monday-Thursday): Lectures/Laboratories/Field trips/Intensive Spanish
June 2 (Friday): travel to Gulf of California/Seafood Processing/Free time
June 3 (Saturday): Free time on Gulf
June 4 (Sunday): Free time on Gulf/Return to Hermosillo
June 5-8 (Monday-Thursday): Lectures/Laboratories/Field trips/Intensive Spanish

June 10(Saturday)-11 (Sunday): Air travel to Kansas City (Overnight in Kansas City)
Requirements:
Junior, Senior, or Graduate Student standing in the College of Agriculture or Human Ecology with interest in Food Science or related field.
