Whey protein concentrate

Whey protein concentrate is an edible-grade product manufactured from dairy whey through a process of ultrafiltration to concentrate whey proteins (Grinstead et al., 2000). Whey protein concentrate products contain 76 to 80% crude protein, but have low concentration of lactose, generally around 5%. Whey protein concentrate is in high demand by the food industry, limiting the availability of this protein source for use in nursery diets.
